Ingredients
- 4 cups mashed potato (1kg)
- 1 cup shredded cheddar cheese (120g)
- 5 green onions
- 2 eggs
- 1/2 cup flour (70g)
- 1 cup breadcrumbs (50g)
Instructions
- Combine the mashed potatoes, shredded cheddar, and sliced green onions in a mixing bowl.
- Shape the potato mixture into balls, using about 2 tablespoons for each, and arrange them on a baking sheet lined with parchment paper.
- In separate bowls, whisk the eggs, place the flour, and fill the third with breadcrumbs.
- Take each potato ball and cover it in flour, dip it into the beaten eggs, and then roll it in the breadcrumbs until fully coated.
- Set the air fryer to 375°F to preheat.
- Lightly oil the air fryer basket and arrange the potato balls in a single layer without touching each other; you may need to fry them in multiple batches. Spray the tops with a bit more oil.
- Air fry them at 375°F for 10 to 15 minutes until they become golden and crisp, making sure to turn them over gently halfway through the cooking time.
