Ingredients

  • 4 cups mashed potato (1kg)
  • 1 cup shredded cheddar cheese (120g)
  • 5 green onions
  • 2 eggs
  • 1/2 cup flour (70g)
  • 1 cup breadcrumbs (50g)


Instructions

  1. Combine the mashed potatoes, shredded cheddar, and sliced green onions in a mixing bowl.
  2. Shape the potato mixture into balls, using about 2 tablespoons for each, and arrange them on a baking sheet lined with parchment paper.
  3. In separate bowls, whisk the eggs, place the flour, and fill the third with breadcrumbs.
  4. Take each potato ball and cover it in flour, dip it into the beaten eggs, and then roll it in the breadcrumbs until fully coated.
  5. Set the air fryer to 375°F to preheat.
  6. Lightly oil the air fryer basket and arrange the potato balls in a single layer without touching each other; you may need to fry them in multiple batches. Spray the tops with a bit more oil.
  7. Air fry them at 375°F for 10 to 15 minutes until they become golden and crisp, making sure to turn them over gently halfway through the cooking time.
