Ingredients

  • – 6 medium carrots (about 600g)
  • – 1 tablespoon olive oil (15 ml)
  • – 1/4 teaspoon (1 ml) coarse salt
  • – 1/8 teaspoon (1 ml) black pepper
  • – 1 tablespoon (15 ml) vegetable oil
  • – 1 1/2 tablespoons (23 ml) honey
  • – 2 cloves garlic, minced


Instructions

  1. Warm up the air fryer to 370°F for 5 minutes.
  2. Meanwhile, slice the carrots into 2-inch diagonal sections. If the pieces are particularly large or thick, cut them in half or quarters lengthwise.
  3. Put the carrot pieces into a medium-sized bowl and combine with the olive oil, salt, and pepper.
  4. Transfer the carrots into the air fryer basket, spreading them out evenly. Cook them for 12 minutes at 370°F, shaking the basket halfway through to mix them up.
  5. As the carrots are cooking, clean the bowl you used earlier. In another small bowl, blend the melted butter, honey, and minced garlic together.
  6. After the 12-minute cooking period, place the carrots back into the mixing bowl. Drizzle the honey garlic butter over them and stir until they are evenly coated.
  7. Place the coated carrots back in the air fryer basket and continue cooking for an additional 6-8 minutes, until they are tender and the edges are nicely browned. If the carrot pieces are smaller, they may cook more quickly. Serve immediately.
