Ingredients
- – 1 tablespoon (15 ml) Cajun or Creole seasoning
- – 24 (450 g) cleaned and peeled extra jumbo shrimp
- – 6 ounces (170 g) fully cooked Turkey/Chicken sausage, sliced
- – 1 medium zucchini, 8 ounces (225 g), sliced into 1/4-inch thick half moons
- – 1 medium yellow squash, 8 ounces (225 g), sliced into 1/4-inch thick half moons
- – 1 large red bell pepper, seeded and cut into thin 1-inch pieces
- – 1/4 teaspoon (1 ml) kosher salt
- – 2 tablespoons (30 ml) olive oil
Instructions
- In a spacious bowl, mix the shrimp with the Cajun seasoning, ensuring they are well-coated.
- Add the sliced sausage, zucchini, squash, and bell pepper to the bowl, season with salt, and drizzle with olive oil, stirring everything together.
- Set the air fryer to a temperature of 400°F to preheat.
- For smaller air fryer baskets, divide the shrimp and vegetable mixture into two portions and transfer one portion to the basket, cooking for 8 minutes and shaking the basket 2 to 3 times during cooking.
- Once done, set the first batch aside and repeat the process with the remaining shrimp and vegetables.
- After both batches are cooked, place the initial batch back in the air fryer for an additional 1-minute cook time.
