Ingredients

  • – 1 tablespoon (15 ml) Cajun or Creole seasoning
  • – 24 (450 g) cleaned and peeled extra jumbo shrimp
  • – 6 ounces (170 g) fully cooked Turkey/Chicken sausage, sliced
  • – 1 medium zucchini, 8 ounces (225 g), sliced into 1/4-inch thick half moons
  • – 1 medium yellow squash, 8 ounces (225 g), sliced into 1/4-inch thick half moons
  • – 1 large red bell pepper, seeded and cut into thin 1-inch pieces
  • – 1/4 teaspoon (1 ml) kosher salt
  • – 2 tablespoons (30 ml) olive oil


Instructions

  1. In a spacious bowl, mix the shrimp with the Cajun seasoning, ensuring they are well-coated.
  2. Add the sliced sausage, zucchini, squash, and bell pepper to the bowl, season with salt, and drizzle with olive oil, stirring everything together.
  3. Set the air fryer to a temperature of 400°F to preheat.
  4. For smaller air fryer baskets, divide the shrimp and vegetable mixture into two portions and transfer one portion to the basket, cooking for 8 minutes and shaking the basket 2 to 3 times during cooking.
  5. Once done, set the first batch aside and repeat the process with the remaining shrimp and vegetables.
  6. After both batches are cooked, place the initial batch back in the air fryer for an additional 1-minute cook time.

Notes

  • Evenly coat the shrimp with Cajun seasoning for enhanced flavor.
  • Shake the air fryer basket 2-3 times while cooking for even results.
  • Divide mixture into two portions for better cooking in a smaller air fryer basket.
