Ingredients
- – 1 medium butternut squash (1.13 kg), about 6 cups, peeled, seeded, and diced into 1″ cubes
- – 2 teaspoon olive oil (10 ml)
- – 1/2 teaspoon (3 ml) sea salt
- – 1/2 teaspoon (3 ml) cinnamon
- – 1/4 teaspoon (1 ml) nutmeg
- – 1 tablespoon (15 ml) maple syrup
- – Chopped fresh sage, to taste
Instructions
- In a large bowl, mix the diced butternut squash with olive oil, sea salt, cinnamon, and nutmeg, ensuring each piece is thoroughly coated.
- Spread the seasoned squash evenly in the air fryer’s basket.
- Set the air fryer to 370°F and cook for 20 minutes, stirring once halfway through the cooking time.
- Pour the maple syrup over the squash and let it cook for an additional minute at 370°F to enhance the sweetness.
- Mix the squash once more and check the seasoning, adding more salt if necessary. Finish by sprinkling with chopped fresh sage and serve right away.
Notes
- – For a richer flavor, consider roasting diced butternut squash in the oven at 400°F for 25-30 minutes before coating with maple syrup in the air fryer.
- – Enhance the taste by experimenting with herbs like rosemary or thyme to add a unique twist to the dish.
- – To achieve perfectly crispy edges, avoid overcrowding the air fryer basket when cooking the butternut squash cubes and adjust the maple syrup amount to your desired level of sweetness.
