Ingredients
- 2 raw chicken breasts
- 1 tablespoon (15 ml) vegetable oil
- 1/4 teaspoon (1 ml) salt
- 1/8 teaspoon (1 ml) pepper
- 1/2 cup (120 ml) pineapple juice
- 1/4 cup (60 ml) brown sugar
- 1/4 cup (60 ml) soy sauce
- 1 clove garlic minced (1 teaspoon (5 ml))
- 1/8 teaspoon (1 ml) ground ginger or 1 teaspoon (5 ml) freshly grated ginger
- 2 teaspoon (10 ml) s cornstarch
- 2 teaspoon (10 ml) s water
- Chunks of fresh or canned pineapple juice drained
Instructions
- Warm up the air fryer to 380 degrees.
- Combine vegetable oil, salt, and pepper in a bowl and stir well. Cover the chicken breasts with this mixture on both sides, then place them in the air fryer. Cook for 10-15 minutes, turning them over halfway. They are cooked when the internal temperature reaches 165 degrees. Allow the chicken to rest for at least 5 minutes.
- While the chicken is cooking, prepare the pineapple sauce by combining pineapple juice, brown sugar, soy sauce, minced garlic, and ginger in a small saucepan. Heat over medium heat and let simmer for 5 minutes.
- In a separate bowl, mix cornstarch with water, then incorporate it into the sauce. Continue to simmer for another minute, stirring constantly, before taking it off the heat.
- Cut the rested chicken into long strips and either thoroughly coat them with the sauce or drizzle the sauce over the top before serving.
- Add pieces of fresh or canned pineapple for additional flavor, if you wish.

- For a thicker sauce, increase the amount of cornstarch and water mixture for desired consistency.
- Adjust sweetness by adding more or less brown sugar based on taste preference.
