Ingredients

  • 2 raw chicken breasts
  • 1 tablespoon (15 ml) vegetable oil
  • 1/4 teaspoon (1 ml) salt
  • 1/8 teaspoon (1 ml) pepper
  • 1/2 cup (120 ml) pineapple juice
  • 1/4 cup (60 ml) brown sugar
  • 1/4 cup (60 ml) soy sauce
  • 1 clove garlic minced (1 teaspoon (5 ml))
  • 1/8 teaspoon (1 ml) ground ginger or 1 teaspoon (5 ml) freshly grated ginger
  • 2 teaspoon (10 ml) s cornstarch
  • 2 teaspoon (10 ml) s water
  • Chunks of fresh or canned pineapple juice drained


Instructions

  1. Warm up the air fryer to 380 degrees.
  2. Combine vegetable oil, salt, and pepper in a bowl and stir well. Cover the chicken breasts with this mixture on both sides, then place them in the air fryer. Cook for 10-15 minutes, turning them over halfway. They are cooked when the internal temperature reaches 165 degrees. Allow the chicken to rest for at least 5 minutes.
  3. While the chicken is cooking, prepare the pineapple sauce by combining pineapple juice, brown sugar, soy sauce, minced garlic, and ginger in a small saucepan. Heat over medium heat and let simmer for 5 minutes.
  4. In a separate bowl, mix cornstarch with water, then incorporate it into the sauce. Continue to simmer for another minute, stirring constantly, before taking it off the heat.
  5. Cut the rested chicken into long strips and either thoroughly coat them with the sauce or drizzle the sauce over the top before serving.
  6. Add pieces of fresh or canned pineapple for additional flavor, if you wish.

Notes

  • For a thicker sauce, increase the amount of cornstarch and water mixture for desired consistency.
  • Adjust sweetness by adding more or less brown sugar based on taste preference.
  • Enhance flavor by marinating chicken breasts in pineapple sauce for 30 minutes before cooking.
