Ingredients

  • 2 salmon fillets (140 g each)
  • 2 teaspoons (10 ml) vegetable oil
  • 2 cloves garlic, minced
  • 3 tablespoons (45 ml) apple cider vinegar
  • 2 teaspoons (10 ml) agave nectar
  • 2 teaspoons (10 ml) mustard
  • 1/2 teaspoon (3 ml) sea salt
  • 1/4 teaspoon (1 ml) ground black pepper
  • Chopped fresh parsley for garnish


Instructions

  1. Set your oven to 400 degrees F and prepare a baking tray by covering it with aluminum foil and applying a layer of non-stick cooking spray.
  2. In a small pan, warm the vegetable oil on medium heat. Introduce the minced garlic and cook until it releases its aroma and starts to brown, approximately 2 minutes, ensuring it doesn’t burn.
  3. Incorporate the apple cider vinegar, agave nectar, mustard, sea salt, and ground black pepper. Stir well and let it simmer until the mixture becomes thick, around 4 minutes.
  4. Position the salmon, skin side down, on the lined baking sheet. Generously coat the salmon with the prepared glaze.
  5. Place in the oven and cook for 5 minutes before taking it out.
  6. Reapply the glaze, then continue baking for another 5 to 10 minutes, until the salmon easily separates with a fork and is fully cooked.
  7. Garnish with chopped fresh parsley and serve.
