Ingredients
- 3 avocados (slightly under-ripe)
- 1 cup panko breadcrumbs (240g)
- 1/2 cup grated cheddar cheese (50g)
- 1/2 teaspoon (3 ml) black pepper
- 2 large eggs, whisked
- Vegetable oil spray
- Coarse salt, optional
- Fresh lemon juice, optional
- 1/2 cup (120 ml) ranch dressing (store-bought or homemade)
- 2 tablespoons (30 ml) hot sauce
Instructions
- Cut the avocados: Halve the avocados and remove the seeds. Use a large spoon to scoop out the flesh in one piece from each half. Cut each piece lengthwise into 5 slices.
- Prepare the panko coating and coat the avocados: In a medium bowl, combine panko breadcrumbs, cheddar cheese, and black pepper. Beat the eggs in another bowl. Dip each slice of avocado into the beaten eggs, then cover thoroughly with the panko mixture.
- Cook the avocado slices: Lightly coat the air fryer basket with vegetable oil spray. Arrange the avocado slices in the basket, ensuring they do not touch. You can fit slices from one whole avocado at a time. Cook in the air fryer at 350°F for 3 minutes on each side until they become crispy and turn golden brown. Repeat with the remaining slices. Alternatively, bake the slices in a 350°F oven for 10-12 minutes until they achieve a golden-brown color.
- Serve: Allow the fries to cool slightly before serving. Optionally, sprinkle with some coarse salt and fresh lemon juice, or serve with ranch dressing mixed with hot sauce.
