Ingredients

  • 2 cups (480ml) apple cider
  • 3 cups (360g) all-purpose flour
  • 2 teaspoons (10 ml) baking powder
  • 1/2 teaspoon (3 ml) baking soda
  • 1/2 cup (100g) organic brown sugar
  • 1 teaspoon (5 ml) ground cinnamon
  • 1/4 teaspoon (1 ml) allspice
  • 1/8 teaspoon (1 ml) salt
  • 3 tablespoons (33g) vegan butter, melted
  • 1/2 cup (150g) vegan yogurt
  • 1 teaspoon (5 ml) vanilla extract
  • 2 teaspoons (10 ml) ground cinnamon
  • 1 cup (200g) organic granulated sugar
  • 1/4 cup (30g) all-purpose flour for dusting
  • 1/4 cup + 2 tablespoons (66g) vegan butter, melted


Instructions

  1. Pour the apple cider into a small saucepan and heat on high until it boils. Reduce to a gentle simmer for 15 minutes, allowing it to decrease in volume by half. Transfer to a heat-safe container and let it cool down.
  2. In a large mixing bowl, blend the dry components: all-purpose flour, baking powder, baking soda, organic brown sugar, cinnamon, allspice, and salt. Stir until thoroughly mixed.
  3. Incorporate the cooled, reduced apple cider, melted vegan butter, vanilla extract, and vegan yogurt into the dry mixture.
  4. Stir until the mixture is uniform. The resulting dough will be thick and sticky. Cover and refrigerate for at least one hour, or up to eight hours.
  5. When ready to cook, sprinkle approximately 1/8 cup (15g) of flour on your work area. Turn out the dough, which should be firmer but still sticky.
  6. Utilize a dough scraper or a large knife to manage the dough. Divide it into two portions and shape each into a thick rectangle, roughly 1 inch thick. Cut horizontally to create a long strip, then slice into 1 to 2 inch cubes. Adjust size if needed. Keep extra flour handy for dusting the surface or the dough scraper.
  7. Place 10 to 20 pieces in the air fryer, depending on its capacity. Cook at 400°F (212°C) for 7 minutes until they turn golden brown. Optionally, use spray oil on the basket and pieces. Repeat until all are cooked. You should get around 70 pieces, but adjust as desired.
  8. Meanwhile, melt the vegan butter and prepare a cinnamon sugar mixture in a wide bowl.
  9. Once cooked, coat the pieces in the melted vegan butter, let excess drip off, and then roll them in the cinnamon sugar. Repeat until all are coated.
  10. After coating, they are ready to be savored!
