Ingredients
- – 4 large bell peppers (600g)
- – 1 tablespoon olive oil (15 ml)
- – 1 small onion, diced (150g)
- – 1 pound lean ground beef (450g)
- – 3 garlic cloves, minced
- – 1 (15-ounce) can no salt added tomato sauce (425g)
- – 2 teaspoons (10 ml) Italian seasoning, divided
- – 1 teaspoon paprika (5g)
- – 1 teaspoon salt (5g)
- – 1/2 teaspoon (3 ml) ground black pepper
- – 1 cup cooked rice (200g)
- – 1 cup shredded mozzarella cheese (100g)
Instructions
- Remove the tops from the peppers and chop them up. Set these chopped tops aside. Take out the seeds from the remaining parts of the peppers.
- In a large pan, warm up the oil over medium-high heat. Add the onions and the reserved chopped pepper tops, cooking until they are soft and have a nice color, about 6-7 minutes. Stir in the ground beef and cook until it’s no longer pink, breaking it into smaller pieces. Add the garlic and sauté for another minute until you can smell its aroma. Mix in the tomato sauce, 1½ teaspoons of Italian seasoning, paprika, salt, and pepper. Bring this mixture to a gentle boil and let it continue to cook until the sauce becomes thick, which should take about 5 minutes, stirring now and then. Take the pan off the heat, add the cooked rice, and mix everything together.
- Set the air fryer to 360°F and let it preheat for around 5 minutes.
- Fill each pepper with 1 to 1¼ cups of the prepared mixture, pressing it in firmly. Arrange the filled peppers in the air fryer basket and cook them for 10 minutes.
- Carefully open the air fryer. Sprinkle each pepper with shredded cheese and the remaining ½ teaspoon of Italian seasoning, then air fry them for another 2 minutes until the cheese is melted, golden, and bubbly.
