Ingredients
- – 1.5-2 lbs (680-907 g) chicken thighs boneless and skinless
- – 1 tsp (5 ml) turmeric powder
- – 1 tsp (5 ml) coriander powder
- – 0.5 tsp (3 ml) white pepper
- – 0.5 tsp (3 ml) cumin powder
- – 4 tbsp (60 ml) coconut cream
- – 1 tsp (5 ml) soy sauce
- – 2 tbsp (30 ml) soy sauce or 1 tbsp (15 ml) low sodium/gluten-free soy sauce
- – 2 tsp (10 ml) grated ginger
- – 2 tbsp (30 ml) hot sauce I use Frank’s original hot sauce
- – Vegetable oil cooking spray for the air fryer basket
Instructions
- Place the chicken thighs in a large bowl and combine them with the turmeric, coriander, white pepper, cumin, coconut cream, soy sauce, grated ginger, and hot sauce.
- Stir the mixture thoroughly, ensuring the chicken is well-coated, then cover the bowl.
- Refrigerate the marinated chicken for a minimum of 30 minutes, or let it sit overnight for enhanced flavor.
- When ready to cook using the air fryer, mist the basket with vegetable oil spray.
- Gently shake off excess marinade from the chicken and arrange the pieces in a single layer in the basket, ensuring they are not touching.
- Avoid overcrowding by cooking in multiple rounds if needed.
- Set the air fryer to 370°F (188°C) and cook the chicken for 15 minutes on one side.
- Flip the chicken and continue cooking for an additional 8-10 minutes or until fully cooked, noting that the time may differ based on your appliance.
- For stovetop preparation, heat 1 tablespoon of vegetable oil in a skillet over medium heat.
- Cook the chicken for 6 minutes on the first side, then flip and cook for another 5-6 minutes until done.
- Serve the chicken warm or at room temperature.
- The chicken is juicy and flavorful on its own, but for extra zest, consider pairing it with a Paleo Thai “Peanut” sauce.
- Enjoy it atop a bed of salad greens or with Keto garlic fried rice for a complete meal.
Notes
- Opt for low sodium or gluten-free soy sauce for a healthier choice.
- Make sure the chicken thighs are thoroughly coated in the marinade for maximum flavor.
- Consider marinating the chicken overnight for a more intense dish.
