Ingredients

  • – 1.5-2 lbs (680-907 g) chicken thighs boneless and skinless
  • – 1 tsp (5 ml) turmeric powder
  • – 1 tsp (5 ml) coriander powder
  • – 0.5 tsp (3 ml) white pepper
  • – 0.5 tsp (3 ml) cumin powder
  • – 4 tbsp (60 ml) coconut cream
  • – 1 tsp (5 ml) soy sauce
  • – 2 tbsp (30 ml) soy sauce or 1 tbsp (15 ml) low sodium/gluten-free soy sauce
  • – 2 tsp (10 ml) grated ginger
  • – 2 tbsp (30 ml) hot sauce I use Frank’s original hot sauce
  • – Vegetable oil cooking spray for the air fryer basket


Instructions

  1. Place the chicken thighs in a large bowl and combine them with the turmeric, coriander, white pepper, cumin, coconut cream, soy sauce, grated ginger, and hot sauce.
  2. Stir the mixture thoroughly, ensuring the chicken is well-coated, then cover the bowl.
  3. Refrigerate the marinated chicken for a minimum of 30 minutes, or let it sit overnight for enhanced flavor.
  4. When ready to cook using the air fryer, mist the basket with vegetable oil spray.
  5. Gently shake off excess marinade from the chicken and arrange the pieces in a single layer in the basket, ensuring they are not touching.
  6. Avoid overcrowding by cooking in multiple rounds if needed.
  7. Set the air fryer to 370°F (188°C) and cook the chicken for 15 minutes on one side.
  8. Flip the chicken and continue cooking for an additional 8-10 minutes or until fully cooked, noting that the time may differ based on your appliance.
  9. For stovetop preparation, heat 1 tablespoon of vegetable oil in a skillet over medium heat.
  10. Cook the chicken for 6 minutes on the first side, then flip and cook for another 5-6 minutes until done.
  11. Serve the chicken warm or at room temperature.
