Ingredients

- Grated mozzarella cheese, for serving, optional
- Chopped fresh parsley, for garnish
Instructions
- Warm up the air fryer to 375°F.
- Combine the zucchini, red bell pepper, mushrooms, onion, carrot, broccoli, and cauliflower in a large mixing bowl. Pour in the vegetable oil, sprinkle in dried basil, garlic powder, salt, and a few turns of black pepper, then mix everything until well coated.
- Place a portion of the vegetables into the air fryer basket, ensuring they are in a single layer. Cook them in the air fryer for 10 to 15 minutes (I prefer 12 minutes), stirring halfway through, until the vegetables are soft and lightly browned. Do this with the remaining vegetables.
