Ingredients

  • 2 ½ pounds (1134 g) chicken wing segments (drumettes and flats)
  • 1 teaspoon (5 ml) kosher salt
  • 1/2 teaspoon (3 ml) finely ground black pepper
  • 1 teaspoon (5 ml) garlic powder
  • 1/2 teaspoon (3 ml) onion powder
  • 1 teaspoon (5 ml) aluminum-free baking powder (optional)
  • 1 tablespoon (15 ml) freshly grated Parmesan cheese
  • 8 tablespoons (1/2 cup or 113 g) unsalted butter
  • 1 tablespoon (15 ml) garlic powder
  • 2 teaspoons (10 ml) onion powder
  • 1/2 teaspoon (3 ml) red pepper flakes
  • 1/4 teaspoon (1 ml) finely ground black pepper
  • 2 tablespoons (30 ml) finely chopped fresh parsley
  • 1/4 cup (60 ml) freshly grated Parmesan cheese

Instructions

  1. Take the chicken wing pieces out of the fridge, dry them with a paper towel, and arrange them on a wire rack. Let them sit for half an hour or proceed with the recipe, incorporating baking powder if desired.
  2. Heat the air fryer to 390°F.
  3. In a medium-sized bowl, combine the kosher salt, black pepper, garlic powder, onion powder, and Parmesan cheese. Include baking powder if you’re using it.
  4. Place the chicken wings into the spice mixture and toss until they are well-coated.
  5. Arrange the wings in a single layer inside the air fryer basket.
  6. Cook the wings for 20 minutes, turning them over with tongs after 10 minutes.
  7. In a small pot over medium heat, melt the butter and add garlic powder, onion powder, red pepper flakes, black pepper, and parsley.
  8. Mix for about a minute until the butter is completely melted, then incorporate the grated Parmesan cheese.
  9. After the wings are cooked, toss them in a fresh, large bowl with the prepared sauce.

Notes

  • Make sure to thoroughly dry the chicken wing pieces before coating them in the spice mixture for extra crispy wings.
  • Ensure the wings are in a single layer in the air fryer basket to achieve even cooking – avoid overcrowding.
  • Adjust the amount of red pepper flakes in the butter sauce to suit your preferred level of spiciness. Garnish finished wings with chopped parsley and grated Parmesan cheese for added flavor.
