Ingredients
- 2 lb (900 g) boneless skinless chicken breast
- 2 tbsp (30 ml) corn starch
- 6 tsp (30 ml) brown sugar
- 1/4 cup (60 ml) hoisin sauce
- 1/4 cup (60 ml) ketchup
- 4 cloves garlic
- 2 tsp (10 ml) ginger, minced
- 1/4 cup (60 ml) soy sauce, low sodium
- 1/4 cup (60 ml) rice vinegar
- 1 tsp (5 ml) sesame oil
- 2 tsp (10 ml) corn starch mixed with 2 tsp (10 ml) water

Instructions
- Chop the chicken breasts into bite-sized pieces and coat them with 2 tablespoons of corn starch. Lightly spray the air fryer basket with oil, arrange the chicken pieces in a single layer without overlapping, and mist them with cooking spray.
- Air fry the chicken at 380°F for 14 minutes, turning them over halfway through cooking. The chicken should be crispy and a golden brown color.
- While the chicken cooks, combine 2 teaspoons of corn starch with 2 teaspoons of water to make a slurry and put it aside. In a small saucepan, mix together all the sauce ingredients.
- Heat the sauce on medium for 2 minutes, then stir in the corn starch slurry to thicken it. Allow the sauce to reach a boil, stirring constantly until it thickens, about 3 more minutes.
- Once the sauce is ready, place the cooked chicken in a bowl and pour the sauce over it. Mix thoroughly to cover the chicken evenly. Sprinkle sesame seeds on top and enjoy!

- For a healthier option, use low sodium soy sauce to reduce the overall salt content in the dish.
- Mince the garlic and ginger finely to evenly distribute their flavors throughout the sauce.
