Ingredients

- – 2 cups (480 ml) potatoes, yukon gold or russet, quartered and cut thin
- – 1 large red bell pepper, cut into 1 inch pieces
- – 1 large orange bell pepper, cut into 1 inch pieces
- – 1/2 large red onion, cut into 1 inch pieces
- – 1 medium zucchini, cut into 1 inch half moon shapes
- – 1 tbsp (15 ml) vegetable oil
- – 1 tsp (5 ml) garlic powder
- – 1 tsp (5 ml) onion powder
- – 1/2 tsp (3 ml) oregano
- – 1/2 tsp (3 ml) dried thyme
- – 1/2 tsp (3 ml) salt
- – 1/4 tsp (1 ml) pepper
Instructions
- Cut the sausage into ½-inch thick slices and chop the potatoes into quarters, ensuring no piece is thicker than ½ inch.
- Combine all the ingredients in a large bowl and mix thoroughly.
- Transfer everything from the bowl into the air fryer basket and heat at 375°F for 13 to 16 minutes, stirring at the midpoint.
- Present with a serving of white or brown rice on the side.
