Ingredients

  • – 1 pound (454 g) chicken breasts, skinless and boneless, chopped into 1-inch chunks
  • – 2 medium zucchini (about 300 g), sliced into 1/2 circles
  • – 1 medium squash (about 200 g), sliced into 1/2 circles
  • – 2 cups (480 ml) broccoli florets
  • – 2 tablespoons (30 ml) vegetable oil
  • – 1 tablespoon (15 ml) Italian seasoning
  • – 1 teaspoon (5 ml) garlic powder
  • – 1 teaspoon (5 ml) onion powder
  • – 3/4 teaspoon (4 ml) chili powder
  • – 3/4 teaspoon (4 ml) salt
  • – 1/2 teaspoon (3 ml) black pepper

Instructions

  1. Set the air fryer to a temperature of 400 degrees Fahrenheit.
  2. Place the chicken, zucchini, squash, and broccoli into a large bowl. Pour in the vegetable oil or spray generously with oil. Sprinkle with Italian seasoning, garlic powder, onion powder, chili powder, salt, and black pepper. Mix thoroughly to ensure the chicken and veggies are evenly coated.
  3. Transfer the seasoned chicken and vegetables into the air fryer once it is preheated. Cook them for 10 minutes. Stir the contents. Continue cooking for an additional 5 to 10 minutes, ensuring the chicken is fully cooked and the vegetables reach the desired tenderness. Note that cooking times may differ depending on the air fryer model and its capacity. Refer to additional notes for further guidance.

Notes

  • Try coating the chicken and veggies lightly in cornstarch before seasoning for a crispier finish.
  • Customize the seasoning with herbs like rosemary or thyme for added flavor.
  • For softer veggies, cut them into smaller pieces to ensure even cooking.
